Course fees are established in order to benefit the students in this course and may, among other things, be used to cover the costs of equipment replacement and maintenance, consumable materials, licensure examinations, or to meet specific regulatory requirements. The course fee expenditure for this specific course covers the purchase of expendable food and food service items and acquisition and replacement of nonexpendable kitchen items. Description: Sustainable ways to acquire, prepare and consume food to support a healthier individual, population, and environment are explored. Food science principles will be emphasized in the laboratory experience.
